Zucchini Rolls with Chevre
Great Summer Recipe
Featuring the following Urban Gardener plants:

1 large zucchini, cut lengthwise into eight 3⁄8-inch-thick slices |

2 Tbsp olive oil |
 |
2 oz chèvre cheese, softened |
 |
2 Tbsp chopped tomato |

 |
 |
2 Tbsp chopped fresh flat-leaf parsley |
 |
Salt and pepper to taste |
 |
You can substitute another soft cheese, such as cream cheese or ricotta, for the chèvre, which is a white goat's milk cheese. |

Directions
Preheat grill or broiler. Brush the zucchini slices with oil and grill or broil them for 2 to 3 minutes on each side, or until lightly browned. Let cool slightly.
Spread each zucchini slice with 1 1⁄2 tsp of chèvre. Top with 1 tsp of chopped tomato and 1 tsp of parsley, and season with salt and pepper.
Roll up the zucchini slices jellyroll style and secure with toothpicks. Serve immediately.
