Walnut Butter Sole

Sprinkle sole filets with salt and pepper. In a large heavy skillet with cover, poach sole filets in wine or water for 5 minutes or until fish flakes easily with a fork. In a small saucepan, melt butter. Add walnuts and remaining ingredients except lemon. Cook, stirring until walnuts are lightly browned.

1 1/2 lb. filet of sole
1 C. dry white wine or water
1/2 C. (1 stick) unsalted butter
3 tbsp. walnuts; chopped
1 tbsp. fresh parsley; minced
2 tbsp. lemon thyme; minced
1 small clove garlic; minced
1 tbsp. fresh lemon juice
salt and freshly ground pepper

Serving Information

Arrange cooked sole filets on serving platter and spoon on sauce. Squeeze on lemon and serve.
