Bring broth to a boil. Add carrots, onion, and celery. Simmer 10 min. Remove vegetables; set aside. Reduce broth to 3 cups. In a large skillet, sauté shitake in oil for 10 min. Add stock, vegetables, and remaining ingredients. Simmer 10 min. Makes about 4 cups.
