Salads
Peel the cucumbers and slice wafer thin. Sprinkle with salt. Let stand 30 mins., and then squeeze cucumbers to release moisture. In a medium size bowl mix sugar, water, vinegar, celery seed, and onion. Add cucumbers to mixture. Mix well. Refrigerate 1 hour.
In a salad bowl, combine the escarole, romaine, bibb lettuce and tomatoes. Whisk together the vinegar, olive oil, cheese, garlic, lemon juice, chicken broth and salt and pepper. Pour over salad, toss and serve.
Seed peppers and cut into strips. Place peppers in a large baking pan. Add garlic cloves. Sprinkle with salt, pepper and half of the lemon juice. Toss slightly to distribute seasonings. Broil on the top rack (cloesest to heat source) stirring occasionally until all peppers are soft and some are slighly charred, about 20 minutes. Place peppers and any accumulated liquid into a bowl or container. Add remaining lemon juice and toss well.
In a large bowl, combine corn, tomatoes, sweet onion, green onion, and cilantro. Squeeze lime juice over mixture, and mix in. Stir in rice vinegar to taste. Season with kosher salt. Cover and chill for 45 minutes.
Cook beans in boiling salted water until just tender, about 3 minutes. Drain and refreshen under running cold water. In a blender or food processor, blend together shallot, garlic, mustard, vinegar, oil, and sour cream. Process until smooth. Add dill, salt, and pepper to taste. Pour over beans and toss to coat evenly. Chill until ready to serve.
In a large bowl, toss together peppers, tomatoes, and zucchini. Whirl mint, vinegar, and salt in blender/processor until smooth. Slowly add oil while motor is running. Pour dressing over vegetables and toss. Line four plates with salad greens. Mound vegetables onto greens and top with sliced onion and Feta cheese.
Cut pears into wedges and brush cut surfaces with lemon juice. Slice cheese into 6 pieces and place on lettuce-lined plates. Arrange pears around cheese. In a small bowl, beat together oil, vinegar, tarragon, and red onion. Drizzle each salad with dressing and sprinkle with pepper.
