Parsley is a popular herb that makes a great addition to a variety of different recipes.

Goat Cheese Popovers

Mix together eggs, flour, parsley, salt, and milk. Pour a little melted butter into each of 10 muffin cups or popover pans. Fill the bottom of each cup with some of the batter. Place 1 piece of cheese in each cup. Top with remaining batter, filling the cups 2/3 full. Bake at 425 degrees for 25-30 miutes, until puffed and browned. Serve at once.

1/4 C. fresh parsley; chopped
1/2 tsp. salt
1 C. milk
