Jalapeños are thick-fleshed peppers that are said to be not too hot and not too mild. They are a favorite among people who like a little "kick' in their food.

Jalapeño Hot Salsa

In a medium sized skillet, heat the oil. Add the jalapeños, garlic and onion. Sauté until the onion is soft, approximately 3-5 minutes. (Careful not to brown the onion) Add the tomatoes and cook until the tomatoes are tender, about 5 minutes. Add the remaining ingredients and cook for 3 minutes. Add a pinch of salt. Let the salsa stand for at least 30 minutes.

3/4 C. chopped jalapeños
2 garlic cloves; minced
1/4 C. spanish onions; chopped
3 C. tomatoes; seeded, peeled and chopped
1 Tbsp. red wine vinegar
1 Tbsp. fresh cilantro; chopped
pinch of salt

Serving Information

Stir well before serving with chips or garlic toast.
