Combine all ingredients and mix well.

	1/2 C. olive oil
	1/3 C. fresh italian parsley; minced
	1 1/2 Tsp. lemon juice; grated
	3 Tbsp. fresh mint
	3 Tbsp. scallions

Serve with salad and/or Urban Gardener fresh cut vegetables for a healthy snack.
