The lemony scent and taste of lemon balm make it an ideal substitution for any recipe calling for lemon peel.

1 whole salmon fillet (3-4 lbs.)
1/4 C. fresh lemon juice
2 tbsp. olive oil
2 scallions; thinly sliced
1/8 tsp. cracked pepper
1/4 C. fresh lemon balm; chopped
