Rosemary is an aromatic herb that is great for seasoning chicken, lamb and pork.

Grilled Chicken with Rosemary Butter

Rub chicken with oil, rosemary, and pepper. Grill over medium coals for 10-15 minutes, until cooked through, turning once. Cream together butter ingredients. Top each grilled chicken breast with some rosemary butter.

2 large chicken breasts; halved
1 tbsp. olive oil
1 tbsp. fresh rosemary; minced
Freshly ground black pepper
Rosemary butter:
1 shallot; minced
1/4 C. (1/2 stick) softened butter
2 tbsp. fresh rosemary; minced
Juice of 1/2 lemon
