Mushroom Thyme Gravy

Bring broth to a boil. Add carrots, onion, and celery. Simmer 10 min. Remove vegetables; set aside. Reduce broth to 3 cups. In a large skillet, sauté shitake in oil for 10 min. Add stock, vegetables, and remaining ingredients. Simmer 10 min. Makes about 4 cups.

6 C. chicken broth
2 carrots; finely chopped
1 onion; finely chopped
1 rib celery; finely chopped
1 lb. fresh shitake mushrooms; cleaned and chopped

2/3 C. dry white wine
1 1/2 tbsp. fresh thyme leaves
1 tbsp. fresh parsley; chopped
Salt and pepper, to taste
